We are looking at places such as New York and Mauritiaus (very different I know), but need to keep it as cheap as possible. It will just be the two of us.

Talk to your local travel agency. This is what they do for a living and they have a ton of resources available to them. Not only are they actually are more affordable than you would imagine, but they are able to get a ton of deals that you couldn’t necessarily find online.
